Chef Siddharth Choudhary

Chef Siddharth Chouhary began his culinary career in New Delhi, India and spent some time working in other countries before immigrating to Canada in 2008. His chose to be a chef because he was looking for something that would be challenging and offer him the opportunity to showcase his creative side.

“The best part is that I grew every time I changed jobs or spent time in a different country. Before I moved to Canada I not only had the opportunity to experience being a chef in India and Ireland, but also in Switzerland, London, Singapore and Malaysia. I wanted to learn as much as I could and once I felt there was nothing more to learn, I would move on. It helped me build my personality and become more keen to learn about different countries, ingredients, and ways of cooking. It’s interesting how the same spices are used differently in various countries – the whole mixology changes to create unique dishes.”

Based on his training and experience Chef Siddharth developed a healthy style of cooking that enhances natural flavours, such as marinating meats for a long time and then braising them by slowly cooking them with minimal natural oil on a low flame.

He uses a variety of fresh natural ingredients – dividing them into three categories herbs, spices, and vegetables – but admits that the one ingredient he couldn’t live without would be cilantro because it can be used in so many different ways.

As part of his culinary process he’s inspired to create new dishes with the changing seasons because the mood is different for each season, as well as the availability of various fresh ingredients.

“Using fresh food supports the local farmers and the local economy. It also helps with creating good tasting dishes.”

For Chef Siddharth, having the freedom to cook anywhere at any time of the day is one of the best parts of being a chef, whether he’s camping, or at home, or in his restaurant.
