Masala Prawns and Green Beans with Potatoes

Serves 4

Ingredients:

  • 20 large prawns, cleaned (tails on or off)
  • 1 tablespoon ghee
  • 6 cloves
  • 6 green cardamom pods
  • 1 stick cinnamon, broken into small bits
  • ½ cup onions, thinly sliced
  • Masala mix:
    -
    1 teaspoon cumin powder

    - 1 teaspoon coriander powder

    - 1 dried red chili, crushed
    - ½ teaspoon course ground black pepper
  • 1 tablespoon garlic, minced
  • 1 large potato, quartered and thinly sliced
  • 1 tablespoon fish curry powder
  • ¼ teaspoon cane sugar
  • 1 lemon, juiced
  • 4 cups French green beans

Method:

  1. Dry the prawns with paper towels and set aside.
  2. Heat the ghee in a large frying pan over medium heat and add the cloves, cardamoms, and cinnamon. Fry until crisp.
  3. Add the onions and fry for two minutes. Now add the masala spices (coriander, cumin, chili, black pepper), then add the garlic and stir-fry quickly (about 30 seconds). Add the potatoes and stir well to coat with the spices. Cover with a lid and cook for two minutes.
  4. Uncover and add the curry powder, mix well and let it roast for one minute. Now add the lemon juice and sugar, stir and cook for another minute.
  5. Add the green beans, toss to coat with the masalas and cover with a lid to steam the beans. Remove the lid and let it dry out (about 2 minutes). Add the prawns, toss well and let it cook for 1 minute. Remove from the heat, cover with the lid and let it rest for 2 minutes before serving.
  6. Serve with steamed rice.
